HELLO
my name is diane mejia
I was diagnosed with severe gluten intolerance over ten years ago. I happened to be finishing up my pastry degree and culinary degree at the time. Rather than throw in the towel, I decided to make pastries and baked goods that I could enjoy (without getting sick). I also experimented with flavors for close friends, one of them being Amy, who now has a cupcake flavor named after her in her memory, “Hey Amy.”

Setting out on my own quest to make gluten-free baked goods, I also discovered the vibrant and amazing gluten-free and vegan communities here in Chi-town. I connected with all kinds of folks, vegan, gluten-free, and indifferent, who all loved my baked goods.
​
So, I decided to go on this journey and am constantly evolving to keep Mindful Baking up to date with new and tasty pastries as well as savory food. The rest is history!

FREQUENTLY ASKED QUESTIONS
What is gluten?
Gluten is the protein in wheat and other grains.
Why no gluten?
Because it makes a lot of folks sick. A lot of people also feel better not eating gluten.
What is celiac disease?
A disease in which the small intestine is hypersensitive to gluten, leading to difficulty in digesting food.
What’s a vegan?
Vegan means no animal products whatsoever. No eggs, dairy, butter, or honey.
Why vegan?
Like we said on the homepage, we don’t have to be vegan, but we feel that among the health benefits of a plant based diet, being vegan helps lower the carbon footprint that factory farms and the meat industry create. Also, lactose is becoming one of the most common allergies. And of course, we love vegetarians and vegans!
Are your products soy-free?
The majority of our products are soy-free. However, we do use a tofu “cream cheese” in some our our frosting and fillings, and our vegan marshmallows contain soy.
So, do you have a storefront somewhere?
Yes! We now have a cafe at 1942 W Montrose Ave in Chicago.
Is your kitchen certified gluten free?
No. Certification is a complex process, however, we currently work in a dedicated gluten-free kitchen, which means no gluten has entered the kitchen since it was built.

Check out the list here. We also do cakes and custom orders. Contact us and we can arrange a pick-up for you at our bakery, cafe or one of our weekly Farmers Markets.
